A Prosecco to talk about
This may sound crazy, but we’re obsessed with a Prosecco. The words “obsessed” and “Prosecco” typically do not belong in a phrase we would normally say, but we’ve been strongly recommending that our customers try this Prosecco, especially if you aren’t shopping for a Prosecco. Sounds bizarre, right?
Allow us to explain our strange ways. Prosecco is typically made from a grape named Glera and is made in a production method called the Tank (or Charmat) Method. The Tank (Charmat) method involves filling a pressurized stainless steel tank with still base wine and then adding yeast to begin a second fermentation to create the bubbles that we expect in Prosecco. The tank method is relatively simple on the sparkling production complexity scale (side note: Champagne and “traditional method” bubbles are made in the most time-consuming and complex process). The resulting tank-method Prosecco is bubbly and fresh with simple fruit flavors such as apple, pear and stone fruits. We always recommend Prosecco as the fizzy component in mimosas, bellinis and any other boozy brunch beverage.
However, the Prosecco we’ve been suggesting, Le Spinee Metodo Antico, is not made in the typical Tank/Charmat method, but instead in the Metodo Antico - Antique Method. This method is similar to that of the trendy Pet-Nat (Petillant Natural) sparkling wines.
Here is how it works. The Metodo Antico base still wine is fermented as a white wine (fermentation occurs are low temperature to preserve the freshness and vivacity). A second natural fermentation occurs in the bottle for 6 months. The yeast remain in the bottle (disgorgement is not performed); giving the wine bread-y, toasty aromas and gentle, lighter bubbles plus half a percentage less alcohol than a typical Prosecco.
Can you use the Le Spinee Prosecco Metodo Antico in your Mimosa? Well, sure, if it’s all you have in your fridge and you are craving a mimosa, you can certainly mix it with some fruit juice to create a delightful breakfast beverage, but…. we would highly recommend drinking it chilled and straight-up in a fluted glass - because it is definitely sip-worthy.
